Mexico, Chiapas

This organic Mexican High grown coffee comes from the Sierra Madre Mountains of Chiapas, the southern state in Mexico, at the border of Guatemala. The trees are primarily Tipica, Borbon and caturra, grown in the volcanic soil of these mountains. The climate is humid, montane, tropical, with a wet season from May to November. The coffee is shade grown at elevations of 1100-1500 meters above sea level.

The coffee is harvested from December to April, hand or machine pulped by each individual farmer in the coop, fermented, washed and sun dried on patios.

The coffee has brisk, bright notes and delicate flavors, a hint of sweetness.
